I.-A raw product, within the meaning of article L. 122-20, is a raw food product that does not contain, in particular during packaging or the process used to preserve it, any combination with any other food product except salt.
II.-The following products may be included in the composition of “home-made” dishes:
Products that the consumer does not expect to be made by the restaurateur himself:
cured meats, sausages and charcuterie, with the exception of terrines and pâtés;
cheeses, edible fats, fresh cream and milk;
bread, flours and dried biscuits;
dried and preserved vegetables and fruit;
pasta and cereals;
yeast, sugar and gelatine;
condiments, spices, concentrates, chocolate, coffee, herbal teas, teas and infusions;
syrups, wines, spirits and liqueurs.
For health safety reasons, the following products:
raw sauerkraut and blanched offal;
-provided the consumer is informed in writing, fonds blancs, bruns and fumets and demi-glace.
