Article R3163-3 of the French Labour Code

In the bakery and pastry-making sectors, night work for young workers may be authorised before 6 a.m. and, at the earliest, from 4 a.m. to enable young workers to take part in a complete bread or pastry-making cycle. Only establishments where not all phases of bread or pastry production are carried out between 6 a.m. and 10 p.m. may benefit from this derogation.

Article R3163-5 of the French Labour Code

The exemption from the ban on night work for young workers is granted by the labour inspector for a maximum period of one year, renewable. The Labour Inspector will assess the particular characteristics of the activity justifying the exemption.
